Pathogen presence in cottage cheese sold for public consumption at Sarajevo Canton markets

Cottage cheese is the largest segment of dairy market and most often consumed as a fresh food. The microbiological quality domestic cottage can pose problem for public health. belongs to group foods having potential health risk. aim this study was conduct research determine level sanitary safety types acquired from frequents markets Sarajevo Canton (Bosnia Herzegovina). Of total (n=40) analysed types, 22 samples (55%) proved be meet requirements, while 18 (45%) did not quality, pursuant criteria stipulated by National Regulation Microbiological Criteria B&H Guidelines Food B&H. included 24 pasteurised 16 unpasteurised milk. However, five (20.8%) milk, 13 (81.3%) milk were non-compliant. analysis conducted compulsory several recommended microorganisms: Salmonella spp., Listeria monocytogenes, coagulase positive staphylococci other species (Staphylococcus aureus), Escherichia coli, yeasts moulds. Our findings confirm that common bacteria S. aureus E. coli. Also, moulds detected but within permissible concentrations. spp. L. monocytogenes in any examined samples.
